Cinnamon Pull-Apart Muffins

This recipe is really beyond being budget friendly it is just plain cheap.

I use two roll of the refrigerated biscuit dough and a small bowl of cinnamon sugar.

Spray your muffin tins with oil then sprinkle a small amount of the cinnamon sugar in the bottom of the muffin cups. Cut each biscuit into quarters and toss in the cinnamon sugar and coat than drop 6 to 8 pieces in each muffin cup. Bake at 400 for about 10 minutes.

If you want you can glaze with a mix of 1 cup powder sugar and 2 tablespoons of milk. I prefer mine unglazed.

Marc and I have made these as a holiday treat in the past. We rolled the biscuits flat and cut them with a small seasonal cookie cutter such as a leaf or heart. Once cut the biscuits were coated with cinnamon sugar than layed out on a cookie sheet overlapping to form a wreath.

Soups On-Potato Soup

This is a very easy recipe and requested often by my kids. The leftovers are even better than dinner the first night.

6 large potatoes diced

1 small onion diced

1 large carrot grated

2 cans chicken broth

1/2 cup bacon crumbles

1 cup milk or cream

garnish with bacon crumbles, grated cheese, sour cream.

Place the first six items in a large crockpot  and pepper to taste, cook on low for 8-10 hours add the milk or cream in the last hour. Garnish as you would a baked potato.

This is a very filling dinner. I often bake extra baked potatoes and used them to make this soup the baked potatoes add a more depth of flavor to the soup. If the soup is too watery I add a little instant mashed potatoes to thicken.

This is in my crockpot  for dinner tonight.

Easy Chili Queso Dip

This recipe is for Donald and Gloria , it is very much like the chili queso dip served at Chili’s. Mary and I often share this when we are out on Mommy dates.

Two cans of Chili (with or without beans)

1 large block of velveta cheese  cut into cubes or two cans of Campbells cheese soup

heat the chili on medium in a sause pan until it begins to bubble, begin stirring in cheese, watch carefully and stir frequently until all of the cheese has melted.

Serve with tortilla chips.

This is a great dip for game day or movie night.
