Soups On-Potato Soup

This is a very easy recipe and requested often by my kids. The leftovers are even better than dinner the first night.

6 large potatoes diced

1 small onion diced

1 large carrot grated

2 cans chicken broth

1/2 cup bacon crumbles

1 cup milk or cream

garnish with bacon crumbles, grated cheese, sour cream.

Place the first six items in a large crockpot  and pepper to taste, cook on low for 8-10 hours add the milk or cream in the last hour. Garnish as you would a baked potato.

This is a very filling dinner. I often bake extra baked potatoes and used them to make this soup the baked potatoes add a more depth of flavor to the soup. If the soup is too watery I add a little instant mashed potatoes to thicken.

This is in my crockpot  for dinner tonight.
